Heat up your pressure cooker on the saute setting with the olive oil. Let it get nice and hot, but not smoke-hot.
Season your chicken cubes with the garlic powder, onion powder, kosher salt, and pepper. Make sure every piece is coated well.
Throw the chicken into the hot oil and sear for about 5 to 7 minutes until they get that golden crust.
Seal the lid onto the pressure cooker and cook it under high pressure for just 5 minutes.
Let the natural release happen so the chicken stays juicy and tender.
Mix the mayonnaise, sweet chili sauce, honey, and rice wine vinegar together in a small bowl until smooth.
Pour that creamy sauce over your tender pull chicken. Stir well in the skillet to coat every piece.
