  • 2 large Sweet Potatoes peeled and cubed
  • 1 large Yellow Onion sliced
  • 3 cloves Garlic chopped
  • 2-3 tablespoons Extra-virgin olive oil or other cooking oil
  • 1-2 teaspoons Seasoning of choice any seasoning blend or just salt and pepper
  • 16 oz Smoked sausage pre-cooked, sliced into 1-inch pieces

  • Preheat your oven to 400°F. Peel and cube the sweet potatoes.
  • Slice the onions and chop garlic. In a large bowl, combine the veggies with olive oil and seasoning. Toss to coat evenly.
  • Spread on a sheet pan in a single layer and roast for 20 minutes.
  • Remove pan, stir veggies to flip, then return to oven for 15 more minutes.
  • Slice sausage into 1-inch pieces while the veggies roast.
  • Add sausage to the pan, toss everything together, and roast for another 10 minutes.
  • Remove from oven, season to taste, and serve hot.
