  • 3 tablespoons extra-virgin olive oil
  • 1 pack Italian chicken sausage 4 links, sliced diagonally
  • 1 medium yellow onion diced
  • 2 loose carrots peeled and chopped
  • 1 tablespoon minced garlic
  • 4 cups organic chicken bone broth
  • 2 cans white beans 15-ounce cans, drained and rinsed
  • 1 bunch kale lacinato or curly, finely chopped
  • 1 teaspoon sea salt
  • ½-1 teaspoon red chili flakes to taste
  • ground pepper to taste

  • Heat up that olive oil in your big pot over medium heat till it’s shimmering nice.
  • Add the sliced sausage and cook it till it’s browned good, about 5–7 minutes. Scoop it out and set aside so it doesn’t overcook.
  • In the same pot, toss in diced onion and chopped carrots. Sauté ‘em until soft around 5 minutes, getting all those sweet smells going.
  • Stir in minced garlic, cook just 1 minute till you sense that fragrant pop, don’t let it burn on ya.
  • Pour in the chicken bone broth and bring everything to a soft simmer.
  • Add the white beans, chopped kale, sea salt, and red chili flakes right to the pot.
  • Return your browned sausage to the mix and let it simmer for 15–20 minutes till veggies soften and flavors meld beautifully.
  • Give it a taste then tweak with salt or pepper before serving. Enjoy that cozy bowl of goodness!

Notes

Serve with freshly grated Parmesan cheese, red chili flakes, and ground pepper. Enjoy!
