Ingredients
  

  • 3-4 pounds beef roast (such as ribeye or sirloin)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme (optional) For added flavor.
  • 1 cup beef broth (or red wine, for richer flavor)

Instructions
 

  • Preheat your oven to 325°F (165°C).
  • In a bowl, combine the minced garlic, chopped rosemary, olive oil, salt, black pepper, and dried thyme (if using). Mix well to create a paste.
  • Pat the beef roast dry with paper towels. Use a sharp knife to make small slits in the roast and rub the rosemary and garlic mixture into these slits, as well as over the entire surface of the meat.
  • Place the seasoned roast in a roasting pan, fat side up. Pour the beef broth (or wine) into the bottom of the pan.
  • Insert a meat thermometer into the thickest part of the roast, making sure it does not touch the bone.
  • Roast in the preheated oven for approximately 2 hours, or until the internal temperature reaches your desired doneness (135°F for medium-rare, 150°F for medium, or 160°F for well-done).
  • Once the roast is cooked, remove it from the oven and cover it loosely with aluminum foil. Let it rest for about 15-20 minutes before slicing; this helps retain the juices.
  • Slice the roast against the grain and serve with the pan juices.

Notes

Adjust the cooking time based on the weight and thickness of the roast, as well as personal preference for doneness.
For an extra flavor kick, you can add other herbs like thyme or oregano to the seasoning mix.
Serve this roast with roasted vegetables or a side salad for a complete meal.
