  • 1 head Garlic fresh and plump
  • 1 teaspoon Extra virgin olive oil for roasting
  • pinch Salt for roasting and seasoning
  • pinch Pepper for roasting and seasoning
  • ¼ cup Good-quality mayo creamy base
  • ¼ cup Finely grated Parmesan cheese for salty depth and cheesy notes
  • ½ teaspoon Fresh lemon juice about
  • ¼ teaspoon Kosher salt to taste
  • ¼ teaspoon Fresh cracked black pepper to taste
  • 1 teaspoon Fresh thyme finely minced
  • pinch Red pepper flakes optional, for heat

  • Preheat your oven to 400° F to prepare for roasting the garlic.
  • Cut the top off the head of garlic to expose the cloves, allowing heat to penetrate.
  • Drizzle the garlic with extra virgin olive oil and sprinkle with salt and pepper.
  • Wrap the garlic head snugly in foil, sealing it tightly.
  • Roast the foil-wrapped garlic in the oven for 30 to 35 minutes until soft and fragrant.
  • Once cool enough to handle, squeeze the tender garlic cloves out into a bowl.
  • Add mayo, Parmesan, fresh lemon juice, kosher salt, cracked black pepper, thyme, and red pepper flakes if desired. Mix until smooth and well combined.
  • Taste and adjust seasoning as needed.
  • Serve immediately or cover and chill until ready to use.

Notes

Store refrigerated in an airtight container up to 5 days. Freeze portions in ice cube trays for later use. Thaw slowly and whisk before serving if separation occurs.
