  • 1 lb baby red or Yukon gold potatoes small ones for even cooking
  • 1 large onion thinly sliced
  • 1 packet dry onion soup and dip mix classic French onion punch
  • 1 teaspoon olive oil for roasting
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Toss the sliced onion, potatoes, olive oil, dry onion soup mix, salt, and pepper in a mixing bowl.
  • Transfer the mix into your pressure cooker. Lock the lid with the sealing ring in place.
  • Set your pressure cooker to high pressure and cook for 5 minutes after pressure builds.
  • Quickly release pressure, then spread into a baking dish.
  • Roast in the oven for 30 minutes until potatoes are golden brown.
