  • ½ medium green cabbage about 1½ pounds
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 3 tablespoon butter
  • 2 tablespoon minced onion
  • 1 tablespoon Dijon mustard
  • ½ teaspoon minced garlic
  • Chopped parsley for garnish

  • Start by cutting your cabbage into wedges. You want each piece to hold together but be thin enough to get tender inside the cooker.
  • Heat up your pressure cooker by setting it to sauté. Drizzle the olive oil over your wedges and season well with salt and pepper.
  • Place the wedges carefully inside the cooker. Close the lid ensuring the sealing ring is snug. You're aiming for that good pressure build.
  • Set your cooker to high pressure for about 3 minutes. This quick cook keeps the wedges tender but firm enough so they don't fall apart.
  • When timer beeps, hit quick release so you don’t overcook. Open the lid carefully and spot those gorgeous tender pulls already forming.
  • Transfer wedges to a baking sheet and pop into a preheated oven at 425°F if you want extra roasting. Let them get golden for 10-15 minutes, turning halfway.
  • While that’s roasting, melt butter in a small saucepan. Add your minced onion and sauté till translucent, about 5 minutes. Stir in Dijon mustard and garlic, cooking for another minute or so.
  • Season that sauce with salt and pepper then drizzle it generously over your cabbage wedges. Top with chopped parsley before serving. Enjoy the layers of flavor you just created!

Notes

Serve with extra sauce drizzled on top and enjoy the crunchy outside and tender inside of the cabbage.
