Ingredients
  

  • 1 cup short-grain rice White or arborio.
  • 4 cups whole milk
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • a pinch of salt
  • to taste raisins or other dried fruits Optional for garnish.

Instructions
 

  • Rinse the rice under cold water until the water runs clear to remove excess starch.
  • In a medium saucepan, combine the rinsed rice, milk, sugar, and salt. Stir well.
  • Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent sticking.
  • Once it starts to simmer, reduce the heat to low and cover the pot. Cook for about 25-30 minutes, stirring occasionally, until the rice is tender and the pudding thickens.
  • When the rice is fully cooked, remove from heat and stir in vanilla extract and ground cinnamon. Adjust sweetness if needed.
  • Allow the pudding to sit for a few minutes to cool slightly before serving.
  • Divide the pudding into serving bowls and garnish with raisins or dried fruits if desired.

Notes

You can use almond milk or coconut milk for a dairy-free version.
The pudding can be enjoyed warm or chilled; refrigerate any leftovers in an airtight container for up to 3 days.
Feel free to customize the spices by adding nutmeg or cardamom according to your taste.
