Recipe French Onion Meatloaf: Pressure Cooker Style

  • 2 lbs Ground meat beef, veal, pork, or a blend
  • 2 Eggs lightly beaten
  • 1 cup Shredded Gruyère cheese
  • 2 cloves Garlic minced
  • 1 tbsp Worcestershire sauce
  • ½ cup Unseasoned breadcrumbs soaked in milk
  • 1 cup Milk for soaking breadcrumbs
  • 1 tablespoon Olive oil
  • 2 Yellow onions thinly sliced
  • ¼ teaspoon Baking soda
  • 1 cup Beef or chicken broth for pressure cooker
  • to taste Kosher salt and black pepper

Instructions

  • Heat olive oil in skillet and sauté sliced onions with baking soda until caramelized, about 25–30 minutes.
  • Cool onions slightly. Soak breadcrumbs in milk for 5 minutes.
  • In large bowl, mix ground meat, garlic, Worcestershire, salt, pepper, eggs, and soaked breadcrumbs. Fold in half the onions.
  • Shape mixture into loaf on parchment-lined tray. Top with remaining caramelized onions.
  • To oven bake: Cook at 375°F for 50–60 minutes until internal temp is 160°F. Let rest 10 mins before slicing.
  • To pressure cook: Add broth to pot, add trivet. Place meatloaf on top. Seal lid and float valve. Cook high pressure 25 minutes.
  • Allow natural release for tender result. Carefully remove and slice.
  • Serve warm and enjoy the juicy, rich French onion flavors.

Notes

Freeze leftovers in individual slices with parchment between each for easy reheating. Reheat using the pressure cooker’s steam function for best results.
