Heat the cooking fat in your pressure cooker pot over medium heat.
Add garlic, ginger, and white parts of scallions. Sauté for 2-3 minutes until fragrant.
Stir in chili sauce for 30 seconds to blend flavors.
Pour in chicken stock, beef broth, water, fish sauce, and soy sauce. Stir to combine.
Lock the lid, bring to pressure, cook for a few minutes then quick release. Add ramen and eggs if using.
Just before serving, add green scallion tops. Ladle into bowls and serve.
Notes
Store broth and noodles separately in fridge. Reheat gently to preserve texture. Freeze broth only for long-term storage.
