Mix Greek yogurt, olive oil, red wine vinegar, oregano, garlic, onion powder, cumin, salt, and pepper in a large bowl to create marinade base.
Add chicken strips and toss to coat. Cover and refrigerate for at least 30 minutes.
Prepare tzatziki by grating cucumbers and mixing with yogurt, dill, cumin, lemon zest, olive oil, salt, and pepper. Chill until ready.
Set up pressure cooker. Once float valve pops, indicating full pressure, start timer.
Cook marinated chicken in skillet or grill pan over medium heat 5–7 minutes per side until golden brown and cooked through.
Assemble pitas with tzatziki, lettuce, chicken, diced tomatoes and cucumbers, pickled onions, and crumbled feta. Serve warm.
Notes
Store leftovers in airtight containers. Keep tzatziki separate for best texture. Reheat chicken gently in microwave or skillet with a splash of water to retain moisture.
