  • 1 Pressure cooker with tight sealing lid
  • 1 Measuring spoons and cups for precise pouring
  • 1 Fork or tongs for shredding the chicken
  • 1 Serving spoon to mix and dish up

  • 4 large boneless skinless chicken breasts
  • 12 pepperoncini peppers plus ¼ cup juice from the jar
  • 1 packet ranch seasoning mix 1 ounce, Hidden Valley works great
  • 1 packet au jus gravy mix 1 ounce
  • ½ cup unsalted butter cut into pieces

  • Place the chicken breasts neatly in the bottom of your pressure cooker.
  • Dump the pepperoncini peppers on top along with the ¼ cup of pepperoncini juice.
  • Sprinkle the ranch seasoning and au jus gravy mix evenly over the chicken and peppers.
  • Dot the chunks of butter all over the top.
  • Seal the lid on your cooker, set it to high pressure for about 22 minutes.
  • Do a quick release when the timer buzzes. Open lid, shred chicken in cooker with forks or tongs, stir and serve hot.

Notes

Chicken breasts can dry out, so if you’re planning on cooking it for the full 8 hours, you may want to swap with boneless skinless chicken thighs as they hold up better to slow cooking.
