  • 2 Tablespoons Butter
  • 2 lbs Boneless Skinless Chicken Breasts
  • Salt/Pepper to taste
  • 1 Yellow onion diced
  • 1 stick Celery diced
  • 4 cups Broccoli florets about ½ lb.
  • 1 Tablespoon Olive oil
  • 10.5 oz Cream of chicken soup
  • cup Sour cream
  • ½ cup Milk
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • ½ teaspoon Mustard powder
  • 2 ½ cups Cheddar cheese shredded
  • ½ cup Crushed Ritz crackers or panko breadcrumbs
  • 2 Tablespoons Butter for topping

  • Preheat oven to 350°F. Dice the chicken into bite-sized pieces and season with salt and pepper.
  • Melt 2 tablespoons butter in a dutch oven over medium heat. Add chicken, onions, and celery and sauté for 3 minutes until chicken is halfway done.
  • Add broccoli and olive oil. Cook for 3-5 more minutes, until chicken is cooked through. Remove from heat.
  • Stir in cream of chicken soup, sour cream, milk, garlic powder, onion powder, mustard powder, and half the shredded cheese.
  • Mix well and transfer to a lightly greased 9x13 casserole dish. Top with remaining cheese.
  • Cover and bake for 20 minutes. Increase oven temperature to 400°F.
  • Combine 2 tablespoons melted butter with crushed Ritz crackers or panko.
  • Sprinkle cracker mixture over casserole and bake uncovered for 8-10 minutes until golden brown.
  • Remove from oven and let rest 5 minutes before serving.
  • Serve warm with rice, biscuits, or mashed potatoes.

Notes

To make this dish quicker, use precooked or rotisserie chicken. Frozen broccoli works with this—thaw and pat dry. For a lighter crunch, try using panko in place of Ritz crackers.
