  • cup Ketchup
  • 2 tablespoons Pickle juice
  • 1 tablespoon Yellow mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and freshly ground black pepper To taste
  • 1 pound Ground beef
  • 4 (8-inch) Flour tortillas
  • 4 cups Shredded cheddar cheese
  • 24 Dill pickle chips Optional but dang good!
  • 1 head Iceberg lettuce Cored and cut into 4 wedges
  • 8 Cherry tomatoes Quartered
  • 1 Shallot Finely chopped

  • Start by mixing mayo, ketchup, pickle juice, mustard, Worcestershire sauce, salt, and pepper together in a small bowl. This burger sauce is gonna carry your flavors all the way through.
  • Heat your skillet over medium and brown the ground beef fully, about 5 to 7 minutes. You gotta drain the grease well unless you want greasy quesadillas, no thanks.
  • Once the beef is cooked, off the heat, stir in half the burger sauce so the meat soaks that flavor up good.
  • Use a clean skillet or griddle to build quesadillas. Lay one tortilla down, sprinkle a cup of shredded cheddar. Spread a quarter of your beef mix, add pickles if you using, then another cup of cheese over.
  • Put a second tortilla on top and cook until golden brown on the bottom, about 3-4 minutes. Get ready for the valve hiss moments with heat—stay close and flip carefully to not make a mess.
  • Flip to cook other side, another 3 to 4 mins, until cheese melts buttery, tortilla crispy, and beef warmed through. Repeat for remaining quesadillas. Serve with the rest of burger sauce on side for dunking.

Notes

This whole shebang from start to finish clocks in around 30 mins, especially if you use quick release instead of waiting natural release on your pressure cooker earlier. Slow release works too but takes longer.
