1 Jigger or measuring cup
4 Tall glasses or mojito glasses
1 Strainer
1 Ice bucket
- 8 leaves fresh mint
- ½ cup coconut water
- ½ cup white rum Omit for a non-alcoholic version.
- ½ cup fresh lime juice About 4 limes.
- ¼ cup simple syrup 1:1 sugar to water.
- ½ cup club soda
- ½ cup cranberry juice
- Ice cubes
- Lime wedges and mint sprigs For garnish.
In a cocktail shaker, add the fresh mint leaves and simple syrup. Use a muddler or wooden spoon to gently crush the mint leaves to release their oils.
Add the coconut water, white rum, and fresh lime juice to the shaker. Fill the shaker with ice cubes and shake well for about 15 seconds.
Strain the mixture into tall glasses filled with ice.
Slowly pour the cranberry juice into each glass. Allow it to settle to create a layered effect.
Top each glass with club soda for added fizz.
Garnish with lime wedges and sprigs of mint before serving.
For a non-alcoholic version, simply omit the rum and add more coconut water or soda.
Adjust the sweetness of the drink by adding more or less simple syrup according to your taste preference.
