  • ¾ cup brown sugar plus extra for sprinkling
  • 1 tablespoon Dijon mustard
  • ¼ cup orange juice
  • ½ cup pineapple juice
  • ½ cup honey
  • 1 teaspoon allspice
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ½ to 1 teaspoon ground ginger for a little zing
  • 2 tablespoons rum optional for boozy sweetness
  • ½ lemon squeezed fresh for brightness

  • maraschino cherries for garnish

  • Preheat your oven to 325°F.
  • Score the ham surface in a diamond pattern.
  • Mix brown sugar, mustard, orange juice, pineapple juice, honey, allspice, nutmeg, cloves, and ground ginger.
  • Brush the glaze over the ham, getting into the cuts.
  • Place ham in a roasting pan and cover loosely with foil.
  • Bake for 1.5 hours, basting every 30 minutes with glaze.
  • Lift foil for last 30 minutes to caramelize glaze.
  • Ensure internal temperature reaches 140°F, then let rest for 15 minutes.
  • Slice and serve with pineapple rings topped with cherries.

Notes

Serve with pineapple rings and maraschino cherries for decoration.
