Ingredients
  

  • 20 oz crushed pineapple Drained.
  • 8 oz cream cheese Softened.
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • ½ cup unsalted butter Melted.
  • ½ cup shredded coconut Optional.
  • ¼ cup chopped nuts Optional.

Instructions
 

  • In a mixing bowl, combine the crushed pineapple with the cream cheese and powdered sugar. Use an electric mixer or whisk until smooth and well combined.
  • In another bowl, whip the heavy cream with the vanilla extract until stiff peaks form. Gently fold this whipped cream into the pineapple mixture until fully incorporated.
  • In a separate bowl, mix the graham cracker crumbs with the melted butter. Press this mixture evenly into the bottom of a 9x13 inch baking dish to form the crust.
  • Spread the pineapple and cream mixture evenly over the graham cracker crust.
  • If using, sprinkle the shredded coconut and chopped nuts on top of the dessert.
  • Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the dessert to set.
  • Once chilled, cut into squares and serve.

Notes

You can customize this dessert by adding other fruits or toppings according to your preference.
For a lighter version, you can use low-fat cream cheese and whipped topping.
This dessert can be made a day in advance for stress-free entertaining.
