Ingredients

Main ingredients

  • 1 large sweet onion sliced and ready to soften
  • 1 tablespoon unsalted butter to melt in and bring richness
  • 1 tablespoon olive oil for a smooth sauté base
  • 2 cups chopped sweet peppers giving color and crunch
  • Kosher salt to taste
  • Freshly ground pepper to taste
  • 3-4 pinches sugar to turn up the natural sweetness
  • 1 ¾ cups cottage cheese creamy and mild to mix in

Instructions

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. You gotta have it ready for when the kugel hits the pan.
  • In a skillet, heat olive oil and butter over medium heat. Toss in your sweet onion and cook until it’s softened and kinda translucent, about 5 minutes.
  • Stir in the chopped peppers, salt, pepper, and sugar. Keep cooking for 5 to 7 minutes till peppers get tender—but not mushy.
  • Meanwhile, in a bowl, mix cottage cheese, sour cream, and Gochujang paste until they blend into a spicy creamy sauce.
  • Add your cooked egg noodles to this cheese mix, then fold in the onion and pepper mix. Stir gently till it’s all combined good and even.
  • Grease a baking dish then spread out the mixture nice and smooth.
  • Bake in your preheated oven for 30 minutes or till the top looks golden and set. Let it cool a bit before serving.

Notes

Each bite hits you with a spicy-sweet jolt balanced with creamy sour cream and cottage cheese. The sautéed onions and sweet peppers add texture and subtle caramelization. Feels like a warm hug with a spicy kick!
