Ingredients
  

  • 12 oz cheese tortellini
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 whole bell pepper, chopped
  • 1 whole zucchini, diced
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • ½ cup grated Parmesan cheese
  • to taste salt
  • to taste pepper
  • fresh basil leaves for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes, until al dente. Drain and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  • Add the cherry tomatoes, bell pepper, and zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
  • Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and combined. Season with salt and pepper to taste.
  • Add the cooked tortellini to the skillet, gently tossing to coat in the creamy sauce and vegetables.
  • Cook for an additional 2-3 minutes to heat through, stirring occasionally.
  • Remove from heat and garnish with fresh basil leaves before serving.

Notes

For added protein, consider adding grilled chicken or shrimp.
You can substitute the heavy cream with half-and-half for a lighter version.
