- 2 tablespoons olive oil
- 3 cloves garlic, minced

- 1 whole bell pepper, chopped
- 1 whole zucchini, diced
- 1 cup heavy cream Can substitute with half-and-half for a lighter version.

Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes, until al dente. Drain and set aside.
In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Add the cherry tomatoes, bell pepper, and zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and combined. Season with salt and pepper to taste.
Add the cooked tortellini to the skillet, gently tossing to coat in the creamy sauce and vegetables.
Cook for an additional 2-3 minutes to heat through, stirring occasionally.
Remove from heat and garnish with fresh basil leaves before serving.
For added protein, consider adding grilled chicken or shrimp.
You can substitute the heavy cream with half-and-half for a lighter version.
Feel free to swap in other vegetables based on your preference or what's in season. Enjoy your flavorful tortellini dish!
