Ingredients
  

  • 12 ounces pasta (penne, fusilli, or your choice)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • optional fresh basil leaves for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta in a colander and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-5 minutes until the onion is translucent and fragrant.
  • Add the halved cherry tomatoes and fresh spinach to the skillet. Cook for another 3 minutes until the tomatoes soften and the spinach wilts.
  • Pour in the heavy cream, stirring to combine, and bring the mixture to a gentle simmer. Reduce the heat to low.
  • Add the grated Parmesan cheese, salt, black pepper, and dried Italian herbs to the skillet. Stir until the cheese melts and the sauce thickens slightly, about 2-3 minutes.
  • Add the cooked pasta to the skillet, tossing gently to coat the pasta evenly with the creamy sauce. Cook for an additional 1-2 minutes to heat through.
  • Serve the pasta bowls warm, garnished with fresh basil leaves if desired.
