Instructions
Steps
Heat olive oil and sesame oil over medium-high in a pan or pressure cooker insert for about 2 minutes until shimmering.
Add ground chicken and diced onion. Cook for 5 to 7 minutes, stirring occasionally, until browned and mostly cooked through.
Stir in hoisin sauce, soy sauce, rice wine vinegar, chili garlic sauce, garlic, and ginger. Cook for 2 to 3 minutes to combine flavors.
Seal pressure cooker lid, bring to high pressure. Once at pressure with valve hiss, cook for 2 minutes then use natural release method.
Remove lid, fold in diced water chestnuts and green onions. Spoon filling into butter lettuce and serve immediately.
Notes
Use ground turkey instead of chicken for a flavor variation. Pre-chopped veggies save time. Filling stores well up to 3 days in the fridge.
