Ingredients
  

  • 12 oz penne pasta
  • 12 oz smoked sausage sliced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes undrained
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 1 cup frozen peas
  • 1 cup shredded mozzarella cheese
  • fresh parsley chopped (for garnish)

Instructions
 

  • In a large pot or Dutch oven, add the sliced smoked sausage over medium heat. Cook until the sausage is browned, about 3-5 minutes.
  • Add the diced onion and minced garlic to the pot, sauté for another 2-3 minutes until the onion is translucent and fragrant.
  • Stir in the diced tomatoes, chicken broth, Italian seasoning, paprika, salt, and pepper. Bring the mixture to a boil.
  • Once boiling, add the penne pasta to the pot. Reduce the heat to a simmer, cover, and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
  • After the pasta is cooked, stir in the frozen peas and cook for an additional 2 minutes until the peas are heated through.
  • Remove the pot from heat and fold in the shredded mozzarella cheese until melted and creamy.
  • Serve hot, garnished with fresh parsley.

Notes

For extra flavor, you can add a pinch of red pepper flakes if you'd like some heat.
If you prefer, you can swap penne pasta for any other pasta shape you have on hand.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Just reheat before serving.
