Cook the bacon in your big pot till crispy. Save the fat and set the bacon aside.
Mix thyme, smoked paprika, salt, onion powder, garlic powder, and pepper in a bowl. Rub all over chicken thighs.
In the same pot with the bacon fat, brown the seasoned chicken thighs on all sides. When golden, set aside.
Sauté chopped cabbage in the pot for a few minutes, until starting to wilt.
Lay down sliced potatoes over the cabbage. Add chicken thighs on top, then sprinkle crumbled bacon.
Pour chicken stock into the pot, ensure it covers the bottom well.
Lock the lid, ensure the float valve is ready and cook for about 30 minutes on low heat. Do a quick release when done.
