  • 2 chicken breasts
  • 1 tablespoon Cajun seasoning divided
  • 2 tablespoon olive oil
  • 1 orange bell pepper cut in ½ inch pieces
  • 1 red bell pepper cut in ½ inch pieces
  • 3 cloves garlic minced
  • 2 ½ cups chicken broth
  • 1 cup heavy whipping cream
  • 16 oz penne pasta
  • 1 cup parmesan cheese grated
  • salt and pepper to taste

  • Coat chicken breasts with half the Cajun seasoning.
  • In a large pot, heat olive oil over medium-high heat and cook chicken until golden and fully done, about 5-6 minutes per side. Remove and set aside.
  • Add bell peppers and sauté for 3-4 minutes until tender.
  • Add garlic and sauté for 1 minute. Remove peppers and garlic and set aside.
  • Add chicken broth, whipping cream, pasta, and remaining Cajun seasoning. Bring to a boil.
  • Cover and cook for 8-10 minutes, stirring occasionally, until pasta is al dente.
  • Stir in parmesan cheese until melted and sauce is smooth. Add peppers and garlic back in.
  • Slice cooked chicken into strips and place on top. Season with salt and pepper. Serve hot.

Notes

For a vegetarian version, skip the chicken and add mushrooms or zucchini instead. You can also use rotisserie chicken to save time.
