Coat chicken breasts with half the Cajun seasoning.
In a large pot, heat olive oil over medium-high heat and cook chicken until golden and fully done, about 5-6 minutes per side. Remove and set aside.
Add bell peppers and sauté for 3-4 minutes until tender.
Add garlic and sauté for 1 minute. Remove peppers and garlic and set aside.
Add chicken broth, whipping cream, pasta, and remaining Cajun seasoning. Bring to a boil.
Cover and cook for 8-10 minutes, stirring occasionally, until pasta is al dente.
Stir in parmesan cheese until melted and sauce is smooth. Add peppers and garlic back in.
Slice cooked chicken into strips and place on top. Season with salt and pepper. Serve hot.
Notes
For a vegetarian version, skip the chicken and add mushrooms or zucchini instead. You can also use rotisserie chicken to save time.
