Heat olive oil in your pressure cooker on sauté mode. Once shimmering, add ground beef and brown it.
Add diced onion to the pot, cooking until soft and fragrant.
Introduce garlic and Italian seasoning, letting them meld for a minute.
Pour in beef broth and tomato sauce, stirring to combine. Bring to a simmer.
Add pasta shells, seal the cooker, and cook at high pressure for 5 minutes.
Use quick release; open the lid when safe.
Stir in heavy cream over low heat, seasoning with salt and pepper.
Top with shredded cheddar cheese, allowing it to melt gently.
