Set the pressure cooker to sauté mode and heat oil. Add onions and garlic, sauté until soft.
Add chicken thighs, season with shawarma spices. Sear until lightly browned.
Add rinsed rice evenly over chicken. Pour chicken broth carefully.
Seal lid and set cooker to high pressure for 12 minutes.
After cooking, use natural release for 10 minutes.
Quick release remaining pressure. Fluff rice with a fork.
Mix chicken into the rice.
Sprinkle parsley and lemon juice on top.
Serve hot, optionally with yogurt or salad.
Notes
If you don’t have bone-in thighs, boneless work fine just reduce pressure cooking time by a couple minutes. Use pre-mixed shawarma spice blends to skip mixing your own.
