  • 4 cups chicken stock low sodium
  • 2 teaspoons chicken bouillon powder
  • 1 10 oz can cream of chicken soup do not add water
  • 10 ounces egg noodles
  • 8 tablespoons butter
  • 3 cups rotisserie chicken diced
  • fresh chopped parsley for garnish
  • salt and black pepper to taste

  • In a large skillet or pot, add the chicken stock, chicken bouillon, and cream of chicken soup. Stir until well mixed. Bring to a boil over medium-high heat.
  • Add in the egg noodles. Stir gently so they're fully submerged. Reduce heat to medium and cook uncovered for 8 to 10 minutes.
  • Stir occasionally and cook the noodles until tender but not mushy.
  • Once noodles are cooked, reduce heat to low. Add the butter and stir until melted.
  • Add in the diced rotisserie chicken. Stir and cook for 3 to 5 minutes until heated through.
  • Season with salt and black pepper to taste. Garnish with fresh chopped parsley and serve.

Notes

Feel free to use other noodles or add vegetables like peas, carrots, or broccoli. Olive oil can replace butter for a lighter option. Stir in sour cream instead of cream of chicken soup for a change.
