  • 1 tablespoon extra virgin olive oil
  • 1 pound smoked turkey sausage sliced thick
  • 1 medium onion diced
  • 1 tablespoon minced garlic
  • 2 cups chicken broth
  • 1 10-ounce can diced tomatoes with or without chiles
  • 0.5 cup milk or heavy cream
  • 8 ounces dry pasta e.g. rotini, penne, or farfalle
  • salt and pepper to taste
  • 1 cup shredded Cheddar-Jack cheese
  • cup sliced scallions for garnish

  • Heat olive oil in a large skillet over medium-high heat until hot.
  • Add smoked sausage and cook until browned, about 3–4 minutes.
  • Add diced onion and cook until softened, about 3 minutes.
  • Stir in minced garlic; cook for 30 seconds until fragrant.
  • Add chicken broth, diced tomatoes, milk or cream, and dry pasta. Stir and bring to a boil.
  • Reduce heat to medium-low, cover and simmer 15–20 minutes or until pasta is cooked.
  • Perform quick release on pressure cooker if using. Season with salt and pepper.
  • Sprinkle Cheddar-Jack cheese and stir until cheese melts.
  • Top with scallions and serve hot.

Notes

Store in airtight container in fridge up to 4 days. Add splash of milk when reheating for smooth cheese. Freezing can alter texture but still tasty!
