One Pot Cheesy Chicken Pasta Pressure Cooker Recipe

  • 2 tablespoon Avocado oil
  • 3 Boneless, skinless chicken thighs or substitute with chicken breasts
  • 1 Onion medium, diced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Garlic powder
  • 16 oz Dry rigatoni pasta
  • 24 oz Pasta sauce any kind
  • 1 jar Water fill the empty pasta sauce jar
  • ¾ cup Mozzarella cheese divided
  • ½ cup Parmesan cheese
  • Salt and pepper to taste
  • Dry parsley for garnish

  • Turn on the pressure cooker to medium heat and add avocado oil until hot.
  • Add chicken and sear until browned on both sides, about 6-8 minutes. Remove and set aside.
  • Add diced onion to the pot and sauté until translucent, about 3-4 minutes.
  • Add Italian seasoning and garlic powder, cook for 1 minute.
  • Stir in dry rigatoni pasta, pasta sauce, and water to the pot. Mix thoroughly.
  • Bring to a boil, reduce to simmer, cover and cook for 12-15 minutes, stirring occasionally.
  • Return chicken to the pot and heat through.
  • Add ½ cup mozzarella and Parmesan. Stir until melted and combined.
  • Top with remaining ¼ cup mozzarella. Cover and let melt for 2-3 minutes.
  • Garnish with parsley and serve hot.

Notes

Add red pepper flakes for a spicy version.
