Instructions
Turn on the pressure cooker to medium heat and add avocado oil until hot.
Add chicken and sear until browned on both sides, about 6-8 minutes. Remove and set aside.
Add diced onion to the pot and sauté until translucent, about 3-4 minutes.
Add Italian seasoning and garlic powder, cook for 1 minute.
Stir in dry rigatoni pasta, pasta sauce, and water to the pot. Mix thoroughly.
Bring to a boil, reduce to simmer, cover and cook for 12-15 minutes, stirring occasionally.
Return chicken to the pot and heat through.
Add ½ cup mozzarella and Parmesan. Stir until melted and combined.
Top with remaining ¼ cup mozzarella. Cover and let melt for 2-3 minutes.
Garnish with parsley and serve hot.
Notes
Add red pepper flakes for a spicy version.
