  • 3 tablespoons extra virgin olive oil gives a nice base
  • ½ medium yellow onion diced finely
  • 1 pound boneless skinless chicken breasts cut into bite sized pieces
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt plus freshly ground pepper to taste
  • 1 cup extra long grain white rice uncooked
  • 2 ½ cups low-sodium chicken broth preferably Better than Bouillon
  • 2 ½ cups broccoli florets cut bite sized
  • 2 cups extra sharp cheddar cheese shredded

  • Heat the olive oil in a large deep skillet over medium-high heat. This gets everything off to a good start.
  • Add the diced onion and cook it until it’s softened, about 3 minutes.
  • Throw in the chicken pieces and season with salt and pepper. Cook until browned on all sides, about 5 minutes.
  • Stir in the minced garlic and cook for 30 seconds until fragrant.
  • Now stir in the uncooked rice, coating it with chicken and oil mixture.
  • Pour in the chicken broth then bring the pot to a boil.
  • Turn heat to low, cover the skillet, and cook for 15 minutes.
  • Place broccoli florets on top, cover again, and cook another 8–10 minutes.
  • Stir in the cheddar cheese until melted and creamy.
  • Serve warm and enjoy!

Notes

If you're using pre-cooked chicken, add it at the end with the cheese just to heat it through.
Use a large skillet or pan with higher edges to hold everything conveniently.
