  • 2 cups chicken broth
  • 4 Cajun chicken sausages
  • 1 cup red bell pepper
  • 1 cup green bell pepper
  • 1 cup yellow onion diced
  • 14 oz fire roasted tomatoes
  • 2 garlic cloves minced
  • 1.5 tablespoons Cajun seasoning
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • extra virgin olive oil for sautéing
  • fresh cilantro for garnish
  • red pepper flakes optional, for extra heat

  • Heat olive oil in the pressure cooker over medium heat.
  • Sauté onions and bell peppers for 5 minutes until soft.
  • Add minced garlic and cook for 1 minute.
  • Add Cajun chicken sausages and brown on all sides.
  • Pour in fire roasted tomatoes, chicken broth, and rice.
  • Sprinkle with Cajun seasoning, garlic powder, sea salt, and black pepper.
  • Seal the lid, and time the pressure for 7 minutes once pressure is built.
  • Perform a slow release, fluff the rice and garnish with cilantro.

This dish can be stored in the refrigerator for up to 4 days or frozen for up to 2 months. Adjust spices to taste.
