Heat olive oil in the pressure cooker over medium heat.
Sauté onions and bell peppers for 5 minutes until soft.
Add minced garlic and cook for 1 minute.
Add Cajun chicken sausages and brown on all sides.
Pour in fire roasted tomatoes, chicken broth, and rice.
Sprinkle with Cajun seasoning, garlic powder, sea salt, and black pepper.
Seal the lid, and time the pressure for 7 minutes once pressure is built.
Perform a slow release, fluff the rice and garnish with cilantro.
