Preheat the oven to 180°C (350°F).
Cream together the butter and sugars until light and fluffy.
Add in the eggs one at a time, beating well after each addition. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
Fold in the chocolate chips and walnuts if using.
Chill the dough for at least 30 minutes.
Scoop tablespoons of dough, flatten slightly, place a teaspoon of Nutella in the center, and top with another tablespoon of dough. Seal edges.
Place cookies onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until edges are golden brown. Let cool before serving.
Notes
These cookies are best served warm. Store leftovers in an airtight container for up to a week.
