  • 1 lb skinless boneless chicken thighs juicy and perfect for pressure cooking
  • ¼ cup cornstarch or potato starch for coating the chicken
  • cup vegetable oil or any neutral oil
  • 2 cloves Garlic minced
  • 1 Red chili pepper sliced (optional)
  • 5 slices Ginger fresh
  • 4 tablespoon Hoisin sauce
  • 2 tablespoon Soy sauce regular or light
  • 2 tablespoon Brown sugar
  • 2 teaspoon Sesame oil
  • 1 tablespoon Cornstarch for slurry
  • ½ cup Water cold, for slurry
  • 1 Green onion finely chopped

  • Toss the chicken thighs in cornstarch for a crispy coat.
  • Heat oil in pressure cooker pot and brown chicken 5-7 mins per side.
  • Remove chicken and stir-fry garlic, chili, and ginger for 1-2 mins.
  • Add hoisin, soy sauce, brown sugar, sesame oil; mix well.
  • Return chicken, coat with sauce, and secure pressure cooker lid.
  • Set to high pressure for 7 mins; quick release steam.
  • Mix cornstarch slurry, add to sauce to thicken, simmer few mins.
  • Garnish with green onion and serve.
