  • 8 large eggs
  • ¼ cup mayonnaise
  • 2 tablespoons sweet pickle relish for tangy pop
  • 1 tablespoon Dijon mustard for depth
  • 2 banana peppers chopped, for spicy kick
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  • Place 8 large eggs in a pot full of water to cover by about an inch. Bring to a boil.
  • Boil for 9-12 minutes based on yolk preference.
  • Quick release or remove from heat for a slow pressure release.
  • Drain and place in ice water for easy peeling.
  • Once cooled, peel gently. Halve and scoop yolks into a bowl.
  • Mash yolks with mayo, relish, mustard, and peppers. Add salt and pepper to taste.
  • Spoon or pipe filling into egg whites. Garnish with paprika and serve.

Notes

Keep in the fridge for up to 3-4 days. Not suitable for freezing.
