  • 12 Flour Tortillas taco or fajita size
  • 1 lb Ground Beef use your favorite kind
  • 1 can (10 oz) Rotel zesty kick
  • 0.5 cup Ranch dressing homemade or bottle
  • 3 tablespoon Homemade taco seasoning or 1 packet store-bought
  • 0.5 teaspoon Sea Salt
  • 0.5 teaspoon Ground Black Pepper
  • 1 teaspoon Minced Garlic
  • 0.5 teaspoon Onion Powder
  • 1 cup Shredded Cheese cheddar, Mexican blend, or pepper jack

  • Preheat your oven to 375°F (190°C) so it's ready when you are.
  • In a skillet over medium heat, cook ground beef until browned, breaking it up as it cooks.
  • Drain grease and stir in Rotel, ranch, taco seasoning, sea salt, pepper, minced garlic, and onion powder.
  • Simmer for 5–7 minutes, stirring occasionally, until mixture thickens.
  • Lightly grease muffin tin. Cut tortillas into small circles and press into muffin wells to form cups.
  • Spoon beef mixture evenly into each tortilla cup.
  • Top each cup with shredded cheese.
  • Bake for 10–12 minutes until cheese is melted and tortilla edges are golden brown.
  • Cool slightly before removing from muffin tin.
  • Serve warm with toppings like salsa, sour cream, or guacamole if desired.

Notes

To prep ahead, assemble cups and refrigerate unbaked. Bake fresh before serving for the best crispiness. Store leftovers in an airtight container up to 3 days or freeze for 1 month.
