Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, oregano, thyme, honey, Dijon mustard, lemon juice, and lemon zest. Mix well to create a marinade.
Place the chicken breasts in a baking dish and pour the marinade over the top, ensuring the chicken is well coated. For best results, let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Once marinated, arrange the chicken breasts in a single layer in the baking dish. Spoon some of the marinade over the top for extra flavor.
Cover the baking dish with aluminum foil (optional) and bake in the preheated oven for 20 minutes.
After 20 minutes, remove the foil and continue baking for an additional 5 to 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Once cooked, remove from the oven and let the chicken rest for 5 minutes before slicing to retain the juices and enhance the flavor.
Serve the chicken with a side of roasted vegetables or a fresh salad for a complete meal.
