Instructions
Place chicken breast, quartered onion, and 2 whole garlic cloves in pressure cooker. Submerge with water. Lock lid and seal.
Set to high pressure for 20 minutes. Let it naturally release.
Open cooker, remove chicken to cool. Discard onion and garlic. Strain broth through fine mesh and return to pot.
Shred chicken. Sauté minced garlic, carrots, coriander, Aleppo pepper, ginger, and turmeric in olive oil for 3–4 minutes.
Add sautéed veggies and shredded chicken to broth. Simmer 10 minutes.
Add baby spinach and stir until wilted. Mix in chopped dill and parsley, plus lemon juice and zest. Stir and season as needed.
Serve hot and enjoy your vibrant, Mediterranean-style soup.
