Toss chicken chunks in a bowl with olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper until coated.
Marinate in fridge for at least 30 minutes.
Add marinated chicken to pressure cooker, seal, and cook on high pressure for 8 minutes. Quick release when done.
Chop cucumbers, tomatoes, bell pepper, and onion. Toss with parsley, lemon juice, salt, and pepper.
Warm pitas, load with chicken, sprinkle with veggies, crumble feta, and add tzatziki before serving.
