  • 1 lb boneless skinless chicken breast cut into 1-inch chunks
  • 2 tablespoon olive oil lovely Mediterranean richness
  • 2 tablespoon lemon juice plus zest if you wanna amp up lemon flavor
  • 2 cloves garlic minced fine
  • 2 teaspoon oregano dried or fresh
  • ½ teaspoon paprika for a bit of smoky color
  • 1 teaspoon kosher salt to bring everything alive
  • ½ teaspoon black pepper fresh ground if you're fancy
  • 8 whole wheat pitas thin ones like Joseph's
  • 1 cup Persian cucumbers chopped
  • 1 cup cherry tomatoes chopped
  • 1 cup red bell pepper chopped
  • ¼ cup red onion diced
  • 2 tablespoon fresh parsley chopped, or substitute mint, basil, dill
  • ½ cup feta cheese crumbled
  • Extra lemon juice, salt, and pepper for tossing veggies
  • ½ cup tzatziki to dollop on top

  • Toss chicken chunks in a bowl with olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper until coated.
  • Marinate in fridge for at least 30 minutes.
  • Add marinated chicken to pressure cooker, seal, and cook on high pressure for 8 minutes. Quick release when done.
  • Chop cucumbers, tomatoes, bell pepper, and onion. Toss with parsley, lemon juice, salt, and pepper.
  • Warm pitas, load with chicken, sprinkle with veggies, crumble feta, and add tzatziki before serving.
