Ingredients
  

  • 14 ounces firm tofu Pressed and cubed.
  • 1 tablespoon cornstarch For coating tofu.
  • 2 tablespoons vegetable oil For frying tofu.
  • 16 ounces gnocchi Fresh or frozen.
  • 2 tablespoons olive oil For sautéing.
  • 3 cloves garlic Minced.
  • 1 cup cherry tomatoes Halved.
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • for garnish fresh basil leaves
  • optional grated Parmesan cheese For serving.

Instructions
 

  • Start by pressing the tofu to remove excess moisture. Cut the tofu into 1-inch cubes and place it in a mixing bowl.
  • Sprinkle the cornstarch over the tofu and toss gently to coat evenly. This will help create a crispy texture.
  • Heat the vegetable oil in a large frying pan over medium-high heat. Add the tofu cubes and cook for about 8-10 minutes, turning occasionally, until golden and crispy. Remove the tofu from the pan and set aside.
  • In the same pan, add the olive oil and minced garlic. Sauté for 1-2 minutes until the garlic is fragrant.
  • Add the cherry tomatoes, dried oregano, salt, and pepper to the pan. Cook for about 5 minutes until the tomatoes start to soften.
  • While the sauce is cooking, boil a medium pot of salted water. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float to the surface. Drain the gnocchi and set aside.
  • Combine the crispy tofu and gnocchi with the sauce in the frying pan. Toss gently to coat everything evenly in the sauce. Heat for another 2 minutes to warm through.
  • Serve the Marry Me Crispy Tofu with Gnocchi on plates, garnished with fresh basil leaves and optional grated Parmesan cheese if desired.
