Start by pressing the tofu to remove excess moisture. Cut the tofu into 1-inch cubes and place it in a mixing bowl.
Sprinkle the cornstarch over the tofu and toss gently to coat evenly. This will help create a crispy texture.
Heat the vegetable oil in a large frying pan over medium-high heat. Add the tofu cubes and cook for about 8-10 minutes, turning occasionally, until golden and crispy. Remove the tofu from the pan and set aside.
In the same pan, add the olive oil and minced garlic. Sauté for 1-2 minutes until the garlic is fragrant.
Add the cherry tomatoes, dried oregano, salt, and pepper to the pan. Cook for about 5 minutes until the tomatoes start to soften.
While the sauce is cooking, boil a medium pot of salted water. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float to the surface. Drain the gnocchi and set aside.
Combine the crispy tofu and gnocchi with the sauce in the frying pan. Toss gently to coat everything evenly in the sauce. Heat for another 2 minutes to warm through.
