Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper optional
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes, with juices
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegetable broth or water
  • 2 cups fresh spinach, roughly chopped
  • ¼ cup fresh cilantro, chopped for garnish
  • to taste lemon wedges for serving

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic, cumin, smoked paprika, and cayenne pepper (if using). Cook for an additional 1 minute until fragrant.
  • Add the chickpeas, diced tomatoes, salt, black pepper, and vegetable broth to the skillet. Stir well to combine.
  • Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.
  • Stir in the chopped spinach and cook for another 2-3 minutes, until the spinach has wilted.
  • Taste and adjust seasonings if necessary.
  • Serve hot, garnished with fresh cilantro and lemon wedges on the side.

Notes

This dish can be served over rice, quinoa, or with crusty bread.
Feel free to add other veggies like bell peppers or zucchini for extra flavor and nutrition.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
