Season the thin chicken cutlets with salt and pepper on both sides.
Dredge each piece in flour, shaking off excess.
Heat olive oil in your pressure cooker’s sauté mode. Add chicken, cook about 4–5 minutes per side until golden. Set chicken aside.
Drop in butter, add minced garlic and cook 1–2 minutes until fragrant.
Pour in chicken stock and scrape the bottom with a wooden spoon. Bring to a gentle simmer.
Add heavy cream and stir. Mix in parmesan cheese, chili flakes, oregano, thyme, and sundried tomatoes.
Put chicken back in and lock the lid. Cook on high pressure for 3 minutes with natural release.
Open lid and spoon sauce over chicken. Sprinkle fresh basil on top.
Serve alongside pasta, mashed potatoes, or bread.
Store leftovers tightly sealed in the fridge for up to 3 days. Reheat gently to maintain sauce texture.
