  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts chicken breasts About 1 lb or 450 g.
  • to taste salt and pepper
  • 3 cloves garlic, minced
  • 1 cup chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • ½ cup grated Parmesan cheese (75 g)
  • ½ cup sun-dried tomatoes, chopped (75 g)
  • 1 teaspoon dried basil

Instructions

  • Start by cooking the penne pasta according to package instructions in salted boiling water until al dente. Once cooked, drain and set aside.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet.
  • Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest on a cutting board.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the chicken broth and simmer for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  • Reduce the heat to low and stir in the heavy cream, Parmesan cheese, chopped sun-dried tomatoes, and dried basil. Mix well until the cheese has melted and the sauce is smooth.
  • Slice the cooked chicken and return it to the skillet. Stir to combine the chicken with the sauce.
  • Add the cooked penne pasta to the skillet, tossing everything together until the pasta is well coated with the creamy sauce.
  • Serve the Marry Me Chicken Pasta hot, garnished with fresh basil leaves.

Notes

Feel free to customize the dish by adding vegetables like spinach or mushrooms.
For a lighter version, you can substitute heavy cream with coconut milk or a low-fat alternative.
This dish can be prepared in advance and reheated, though the pasta may absorb some sauce. Add a splash of broth when reheating to loosen it up.
