Cook gnocchi in boiling water per package directions. Reserve ½ cup of cooking water, then drain.
Melt butter in a large skillet. Add garlic and sauté for about 1 minute until fragrant.
Stir in flour and cook for 1-2 minutes to form a roux.
Slowly whisk in chicken stock and heavy cream until smooth. Add tomato paste and stir.
Stir in sun-dried tomatoes and parmesan cheese. Cook 2-3 minutes until sauce thickens.
Add cooked gnocchi and reserved gnocchi water. Stir to coat well.
Add cooked diced chicken and stir to combine. Simmer until heated through.
Stir in red pepper flakes, garlic powder, oregano, salt, black pepper, thyme, and paprika.
Top with basil and additional parmesan if desired. Serve warm.
Notes
Use rotisserie chicken for quick prep. Store leftovers in the fridge for up to 4 days. Reheat gently to maintain creamy texture.
