Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup broccoli florets fresh
  • 1 cup cauliflower florets fresh
  • 1 cup sliced mushrooms
  • 1 cup Swiss cheese shredded
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil for sautéing

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, salt, and black pepper. Sauté until the chicken is no longer pink, about 5-7 minutes.
  • In a mixing bowl, combine the heavy cream and chicken broth. Whisk until well blended.
  • In the prepared baking dish, layer the sautéed chicken, broccoli, cauliflower, and mushrooms evenly.
  • Pour the cream and broth mixture over the layered chicken and vegetables, making sure it’s evenly distributed.
  • Sprinkle the shredded Swiss cheese on top.
  • Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden brown.
  • Let it cool for a few minutes before serving.

Notes

For variations, you can add other low-carb vegetables such as bell peppers or spinach. You can also use a combination of cheeses if preferred. This casserole can be stored in the refrigerator for up to 3 days, and it reheats well.
