Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
Flatten the chicken breasts to an even thickness using a meat mallet or rolling pin to ensure they cook evenly.
In a shallow bowl, season the flour with salt, pepper, garlic powder, and paprika. Mix well.
In another shallow bowl, beat the two eggs.
In a third shallow bowl, combine the breadcrumbs and grated Parmesan cheese.
Dip each chicken breast first into the flour mixture, making sure it's entirely coated. Shake off the excess.
Next, dip the flour-coated chicken into the beaten eggs, allowing any excess to drip off.
Finally, coat the chicken in the breadcrumb and Parmesan mixture, pressing firmly to adhere the crumbs.
Place the coated chicken breasts on the prepared baking sheet. Spray the tops lightly with cooking spray for extra crispiness.
Bake in the preheated oven for about 25 minutes or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
Remove the chicken from the oven and let it rest for a few minutes before serving.
Garnish with fresh parsley and serve with marinara sauce on the side, if desired.
