- 1 cup ricotta cheese
- 2 cups fresh spinach packed
- 1 lemon juiced and zested
- 2 tablespoons olive oil
- 2 cloves garlic minced
- Salt to taste
- Black pepper to taste
- ¼ cup grated Parmesan cheese plus extra for serving
- Crushed red pepper flakes optional, for heat
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.
Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
In a mixing bowl, combine the ricotta cheese, lemon juice, lemon zest, and grated Parmesan cheese. Mix well until smooth.
Add the drained pasta to the skillet and toss with the spinach and garlic. If the pasta seems dry, gradually add some of the reserved pasta water until you reach your desired creaminess.
