- 1 lb ground beef
- 4 cups cooked white or brown rice
- 4 cloves garlic, minced
- 1 inch piece ginger, grated
- 4 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon red pepper flakes optional
- 4 green onions, chopped
- 1 cup shredded carrots
- 1 cup broccoli florets optional
- sesame seeds for garnish, optional
Cook the rice according to package instructions. Set aside once cooked.
In a large skillet, heat the sesame oil over medium heat.
Add the minced garlic and grated ginger to the skillet and sauté for about 1 minute until fragrant.
Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a spatula until browned and cooked through, about 5-7 minutes.
Drain excess fat from the skillet if needed.
Stir in soy sauce, brown sugar, rice vinegar, and red pepper flakes (if using). Mix well and cook for another 2-3 minutes to combine flavors.
Add the shredded carrots and broccoli (if using) to the skillet. Cook for another 2-3 minutes until the vegetables are tender.
Serve the beef mixture over a bowl of cooked rice. Garnish with chopped green onions and sesame seeds if desired.
This dish is great for meal prep and can be stored in the refrigerator for up to 3 days. Just reheat before serving.
For a vegetarian option, substitute ground beef with crumbled tofu or a meat alternative.
