If the chicken breasts are thick, pound them to an even thickness using a meat mallet or rolling pin.
Dip each chicken breast into the egg mixture, allowing the excess to drip off. Coat it thoroughly in the Parmesan-almond flour mixture, pressing down to ensure it sticks well.
Place the coated chicken breasts on the prepared baking sheet. Lightly spray the tops with olive oil or brush with melted butter for extra crispness.
Bake in the preheated oven for 20-25 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
Once done, remove from the oven and let rest for a few minutes before serving.
