This low carb broccoli salad is the perfect side dish for any barbecue. It’s full of so much good stuff that I have a hard time not eating the whole bowl.

  • 8 cups chopped broccoli florets for that fresh crunch you crave
  • 6 ounces sharp cheddar cut into small cubes to add cheesy goodness
  • ¼ cup diced red onion for that bite of sharpness
  • ¼ cup thinly sliced almonds for extra texture and nutty flavor
  • 8 slices bacon fried and crumbled to add smoky saltiness
  • ½ cup mayo to make the dressing creamy and smooth
  • ¼ cup sour cream for a tangy twist
  • 2 tablespoons ranch seasoning mix to tie the flavors together
  • 1 teaspoon white distilled vinegar

  • Start by chopping your broccoli into bite-sized florets. You want these to be big enough to get that crunch but small enough to scoop easy.
  • Open up your pressure cooker and pour in just a tiny bit of water to create some steam. Place broccoli florets inside on a rack or steamer basket so they don’t get soggy.
  • Seal your cooker with the sealing ring set, making sure the float valve is down. Set the cooker on high pressure for about 1 minute. Yeah, just one minute of pressure cooking.
  • Once done, don’t rush it. Use slow release to let the steam out gently. You don’t want mushy broccoli, trust me.
  • While broccoli cooks, fry up your bacon slices until nice and crispy. Crumble ’em and set aside.
  • In a large bowl, toss together your steamed broccoli, cheddar cubes, red onion, and sliced almonds. Leave the bacon for last.
  • Mix mayo, sour cream, ranch seasoning, and vinegar in a small bowl. Pour this dressing over broccoli mix, then add the bacon and give everything a gentle toss. Serve it right away or chill for 30 minutes if you wanna bring out more flavor.

Notes

If you’ll be serving this recipe at a later time, store the bacon separately so it doesn’t become soggy. Top with bacon just before serving. This recipe lasts for up to 4 days in the fridge, though the broccoli does become softer the longer it sits.
