  • 1 pound ground chicken
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • ¼ cup chopped fresh parsley
  • 1 egg
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • ¼ cup grated mozzarella cheese optional, for topping

  • Mix ground chicken, breadcrumbs, Parmesan, garlic, parsley, egg, milk, salt, and pepper in a large bowl until just combined.
  • Shape mixture into a loaf that fits inside your pressure cooker pot.
  • Drizzle olive oil over the top of the meatloaf.
  • Place meatloaf in the cooker, add 1 cup broth or water to bottom.
  • Seal lid, check sealing ring, and set to high pressure for 20 minutes.
  • Do a quick release. Internal temp should reach 165°F.
  • If using mozzarella, sprinkle on top and broil or bake briefly to melt.
  • Rest the meatloaf 5 minutes before slicing and serving.

Notes

Leftovers can be stored in the fridge up to 3 days, or frozen for easy reheat. Cheese topping is optional but encouraged for extra flavor!
