Instructions
Mix ground chicken, breadcrumbs, Parmesan, garlic, parsley, egg, milk, salt, and pepper in a large bowl until just combined.
Shape mixture into a loaf that fits inside your pressure cooker pot.
Drizzle olive oil over the top of the meatloaf.
Place meatloaf in the cooker, add 1 cup broth or water to bottom.
Seal lid, check sealing ring, and set to high pressure for 20 minutes.
Do a quick release. Internal temp should reach 165°F.
If using mozzarella, sprinkle on top and broil or bake briefly to melt.
Rest the meatloaf 5 minutes before slicing and serving.
Notes
Leftovers can be stored in the fridge up to 3 days, or frozen for easy reheat. Cheese topping is optional but encouraged for extra flavor!
